North American Maple Syrup Producer’s Manual

For more than three decades, maple producers have depended on and have been well-served by the Maple Syrup Producer’s Manual, written first by C. O. Willits and then by C. O. Willits and Claude H. Hills. During that time, there have been many changes in the maple industry including changes in technology, in maple markets and marketing strategies, and even in the character of maple producers. In the early 1990s the North American Maple Council recognized the need for an updated manual.
